A T-bone steak is a cut of beef that comes from the loin area of the cow. It’s named after the bone that runs through the centre of the steak, which looks like a “T.” The steak is cut in two, with the bone separating the sirloin side from the filet mignon side. T-bone steaks are known for their tenderness and succulent flavour. They come from the short loin section of the cow, located towards the middle of the animal’s back. When grilled on the Braai, T-bone steaks offer the best of both worlds: a small eye of fillet on one side of the bone and sirloin on the other, making them a flavourful choice for steak lovers.
